When the Bergamot is left to marinate in ethyl alcohol, it provides the basis for some excellent local liqueurs. These include Bergamino or Bergamello – classified as a traditional agro-food product – and some select bitter liqueurs. With the addition of aromatic herbs, on the other hand, one can produce a digestive elixir with low alcohol content. Bergamot can also be used in place of lemon to prepare delicious fruit juices and to flavour tea.
